A new way to make scones. Using a prepackaged mix!

Yep. I’ve found a new and easier way to make scones. Use a prepackaged biscuit mix.

So, I shared in a previous post a great recipe for making scones. That one is really easy, too. But I decided to try something different. I found this Pillsbury Biscuit mix and figuring a scone is a biscuit anyway, I figured I could adapt it.

The recipe call for 2/3 cup of milk. That’s it. I used Oatmilk, added about 1/3 cup sugar and then incorporated my add-ins.

These are very rustic looking scones but I kind of like that look. Looks like something one would find in a bakery.

To this first scone, I added about a cup of fresh blackberries and a little grated lemon peel. I must say, they are good.

These are quite large because the blackberries really added bulk and are very rustic looking which I really like. I’m going to serve them with whipped cream. Yum!!

This second is a combination of 1/2 candied ginger and 1/2 tsp ground ginger. They leave a little “bite”

Last week I made some using the mix and added lemon peel and 1/2 cup dried cranberries. I added a light glaze as well. There were also delicious.
