Great pasta and asparagus with lemon vinegar

OK, as you know, I’m on a quest this year to become a good cook. I’m trying to be creative and cook healthier as well.

I’ve never liked cooking because I feel inadequate. (I like baking, however, and feel pretty confident in that area.) Plus, I never know what to pair with what. Especially when it comes to vegetables. I’m not a fan of frozen veggies and canned have a lot of sodium. So I’m trying to incorporate more fresh items. This particular combination was terrific.

Anyway, I love lemon flavor in just about anything. I made lemon scones a few weeks ago that were terrific. You can find that post here.

I don’t have a recipe but I can walk you through it.

But first here’s what I fixed.

Here’s how I did it.

I cooked the angel hair pasta to “al dente.” I squeezed on lemon juice from about two lemons.Then I added a cup of ricotta cheese. We have a wonderful cheese store in our town and they also sell varieties of olive oil and vinaigrettes. This is one of my favorites. I added this to taste. Oh, I also added a little, you guessed it, lemon olive oil.food/main course/pasta

 

Then I lightly fried mushrooms and asparagus in olive oil until browned a little.

I sprinkled the same lemon vinegar on the asparagus. The entire meal was delicious.

I was thinking. Wouldn’t it be great if our lives always looked this appetizing? As Christians, it’s supposed to but if you’re anything like me, it doesn’t always. We are supposed to emanate a good “odor”, something others find pleasing.

The next time you are cooking a beautiful meal, ask yourself if your life looks as good as your meal!
